Just wondering if there is a way to restrict the data/ options viewed relevant to the contractor/ customer only?
Currently when we create a user and assign it to the contacts and the contractor, and we login using that credentials, it would not filter data or configurations relevant to that particular contractor. As in it would show up gateways and services of all the customers in the system just like the system admin.

There is no assigning Admin users to contractors. Contact is just email object to use it later in places where sending to email required. So there is no “contractor based” roles separation, all admin users will see all records.
If your Admin users should see data related to different contractors - it is currently not possible.
If you want to provide some UI to your contractors to see some statistics, CDRs, balance status, invoices and payments - there is other interface - customer portal.
